Breakfast Idea

Each time I go to Bed, I always remember the saying; eat  breakfast like a King😊 and it makes me look forward  to waking up and storming the Kitchen to explore.
The fact that you have to eat breakfast  like a King doesn't  mean you should gulp down Eba and Hot soup (no offence to people who do this) but come on heheheh.
Before you prepare breakfast,  check what  you have in the your fridge or store. You must not have it all to enjoy a palatable breakfast. As for me, anything available is desirable.
This post is for people who do not know what to prepare for breakfast  some days. Most people hardly have time to do so, but since  tomorrow  is Saturday, why not give nourish your body and that of your family with a sumptuous breakfast like this....

This is Irish Potato Salad, Sardine and egg Sauce, Bread.
You can enjoy this with a cup of Tea, Coffee, Orange Juice etc. 

How to make potato Salad
Ingredients 
Potato
Cucumber
Lectuce
Mayonnaise 
Cabage  (optional )
Direction
Peel, dice and boil Potato
Add salt to taste
Peel and dice cucumber 
Cut the lectuce 
Cut the cabbage
When the potato soft, bring down from the heat and allow to cool a bit.
Add the lectuce, cucumber, cabbage into the potato.
 scoop in mayonnaise and gently mix
Enjoy!!!

Hey Food Lovers!!! It's  been a while and it feels good to be back to cooking and blogging. I'm  sure no one wants to hear the boring long story about why I went offline for a while so I'll  just jejely skip it and move on to today's  topic.

Yesterday my Sister sent me a picture to show me she's  learning how to  plate food and I was impressed and got inspired to make this post. A lot of people think only rich people  make their  food look nice but that's  just a very funny myth. Any body's food can look good, when a dish is well plated, it's  pleasing to the eyes. Remember  the eyes eats before the mouth. The way food is presented makes one hungry even when you are full, you just want to taste it. Some people might say plating takes time but that's not true. It's  actually fun seeing  your food look so amazing even if it doesn't  taste so great lol (my food always tastes great duuuh).....
This is a non plated food.  This is how a lot of people serve food. Even though this food might taste  so delicious it doesn't  exactly  please the eyes.
Now this is the same food, same plate, but different look. It looks like an ajebota  lol

So what's your excuse for dishing  out food like the first picture? ??? Now receive CHANGE!!!! πŸ˜‚πŸ˜‚πŸ˜‚

COCONUT SAUCE!

when ever I go out and see Coconut, I just buy it even when I don't have need for it but because it's coconut, mama must buy! The funny thing is I'm allergic to eating raw coconut but I still buy it, break it, drink the water, eat the coconut, swallow the milk and then spit out the chaff....yeah weird but I have to save my fragile belly from pain because the chaff upsets it. anyhoooooo my love for coconut will never die lol.

Since I can't eat coconut like normal people do, I decide to use for my cooking. we all know about the famous "coconut rice" and shortly I will bring my own style of making it but it's not what I'm here for today...{drinks cold water}so.....today it's about COCONUT SAUCE!!!
the taste no be here.  its very easy to make  and very healthy as it is prepared with a lot of vegetables and no oil. I know a lot of people who get tired once any food that has anything to do with coconut is mentioned not because they hate it, but the coconut processing is tiring. The good news is that coconut powder is now sold the shops, so if you want to skip the breaking and blending and sieving of the coconut process, you can just walk into a shop and buy coconut powder. [I used Emma coconut powder].

INGREDIENTS
EMMA COCONUT POWDER- 3[SATCHETS]
500g CHICKEN
CARROT -10
GREEN PEPPER- 3
GREEN PEAS
SPRING ONIONS
CURRY [TO SEASON THE CHICKEN]
DRY PEPPER
SALT TO TASTE.

DIRECTION
Wash, season and boil the chicken,
slice the vegetables,
empty the coconut powder in a small bowl and melt with small water till it's smooth and looks like milk,
when the chicken is tender, add the coconut powder[now turned milk] and stir, then cover the pot and allow to boil for 15minutes.
add all the vegetable.
cook for another 5 minutes
Coconut Sauce is ready!!!

BREAKFAST IDEA FOR THE WEEKEND!

TGIF!!! we all get excited about the weekend because we have the whole time to ourselves, hang out with friends, attend parties and for food lovers...romance the kitchen lol. a lot of people like plantain, I personally cherish plantain. plantain can either be fried or boiled. it can either be eaten with sauce or pottage either way, DODO IS DODO! I woke up today craving for plantain and I was so sure I didn't want the regular fried or boiled plantain and I thought of doing something different with it so I did both...hehehehee yeah I boiled and also fried P baby lol it turned out hmmmmm amazeballs......I call it "GOLDEN PLANTAIN" with TOMAPEP SAUCE. I call it TOMAPEP because it is made with the same amount of tomato and pepper.

INGREDIENTS:
PLANTAIN-2 ;
FLOUR- 1 SPOON;
EGG- 2 ;
PEPPER;
STOCK CUBE-1;
SALT- TO TASTE ;
ANY OTHER SEASONING OF YOUR CHOICE;




For the TOMAPEP SAUCE;
TOMATO-6;
PEPPER-6;
ONIONS-1[LARGE] ;
CURRY POWDER;
THYME;
GARLIC-1{optional}
STOCK-1;
1tbsp VEGETABLE OIL ;
SALT TO TASTE:

DIRECTION wash, peel and cut the plantain into 5 pieces. boil with a little water for few minutes. it has to be firm and not tender. break the egg in a bowl, add pepper, stock cube, salt and 1 spoon flour in a bowl and beat till incorporated. dip the plantain step by step into the egg and flour mixture and place it in a flat surface. heat the oil and deep fry the plantain on a medium heat until it's golden brown.



THE SAUCE wash and cut the tomato. wash and slice the onions. blend pepper [If you are using garlic, blend it with pepper}. heat the oil and add the onions stir fry for 3 minutes. add the tomato and other ingredients and stir fry for at least 10 minutes. add the pepper and salt and stir for another 3 minutes. serve HOT with any beverage of your choice.

add flour into the egg and mix
 
dip the plantain in the egg and flour mixture
 
 
SERVE HOT WITH ANY BEVERAGE OF OUR CHOICE.
