COCONUT SAUCE!

when ever I go out and see Coconut, I just buy it even when I don't have need for it but because it's coconut, mama must buy! The funny thing is I'm allergic to eating raw coconut but I still buy it, break it, drink the water, eat the coconut, swallow the milk and then spit out the chaff....yeah weird but I have to save my fragile belly from pain because the chaff upsets it. anyhoooooo my love for coconut will never die lol.

Since I can't eat coconut like normal people do, I decide to use for my cooking. we all know about the famous "coconut rice" and shortly I will bring my own style of making it but it's not what I'm here for today...{drinks cold water}so.....today it's about COCONUT SAUCE!!!
the taste no be here.  its very easy to make  and very healthy as it is prepared with a lot of vegetables and no oil. I know a lot of people who get tired once any food that has anything to do with coconut is mentioned not because they hate it, but the coconut processing is tiring. The good news is that coconut powder is now sold the shops, so if you want to skip the breaking and blending and sieving of the coconut process, you can just walk into a shop and buy coconut powder. [I used Emma coconut powder].

INGREDIENTS
EMMA COCONUT POWDER- 3[SATCHETS]
500g CHICKEN
CARROT -10
GREEN PEPPER- 3
GREEN PEAS
SPRING ONIONS
CURRY [TO SEASON THE CHICKEN]
DRY PEPPER
SALT TO TASTE.

DIRECTION
Wash, season and boil the chicken,
slice the vegetables,
empty the coconut powder in a small bowl and melt with small water till it's smooth and looks like milk,
when the chicken is tender, add the coconut powder[now turned milk] and stir, then cover the pot and allow to boil for 15minutes.
add all the vegetable.
cook for another 5 minutes
Coconut Sauce is ready!!!

BREAKFAST IDEA FOR THE WEEKEND!

TGIF!!! we all get excited about the weekend because we have the whole time to ourselves, hang out with friends, attend parties and for food lovers...romance the kitchen lol. a lot of people like plantain, I personally cherish plantain. plantain can either be fried or boiled. it can either be eaten with sauce or pottage either way, DODO IS DODO! I woke up today craving for plantain and I was so sure I didn't want the regular fried or boiled plantain and I thought of doing something different with it so I did both...hehehehee yeah I boiled and also fried P baby lol it turned out hmmmmm amazeballs......I call it "GOLDEN PLANTAIN" with TOMAPEP SAUCE. I call it TOMAPEP because it is made with the same amount of tomato and pepper.

INGREDIENTS:
PLANTAIN-2 ;
FLOUR- 1 SPOON;
EGG- 2 ;
PEPPER;
STOCK CUBE-1;
SALT- TO TASTE ;
ANY OTHER SEASONING OF YOUR CHOICE;




For the TOMAPEP SAUCE;
TOMATO-6;
PEPPER-6;
ONIONS-1[LARGE] ;
CURRY POWDER;
THYME;
GARLIC-1{optional}
STOCK-1;
1tbsp VEGETABLE OIL ;
SALT TO TASTE:

DIRECTION wash, peel and cut the plantain into 5 pieces. boil with a little water for few minutes. it has to be firm and not tender. break the egg in a bowl, add pepper, stock cube, salt and 1 spoon flour in a bowl and beat till incorporated. dip the plantain step by step into the egg and flour mixture and place it in a flat surface. heat the oil and deep fry the plantain on a medium heat until it's golden brown.



THE SAUCE wash and cut the tomato. wash and slice the onions. blend pepper [If you are using garlic, blend it with pepper}. heat the oil and add the onions stir fry for 3 minutes. add the tomato and other ingredients and stir fry for at least 10 minutes. add the pepper and salt and stir for another 3 minutes. serve HOT with any beverage of your choice.

add flour into the egg and mix
 
dip the plantain in the egg and flour mixture
 
 
SERVE HOT WITH ANY BEVERAGE OF OUR CHOICE.

HAPPY SUNDAY FOOD LOVERS!

so it's Sunday, a day we are assumed to stay home and chill with our loved ones, a day you can decide to sleep all day. for the working class, today reminds them that Monday is approaching and they get scared lol. i remember when i was working, sunday night was a moody night for me lol anyway,many years ago, the white men introduced what is now a "compulsory sunday rice" to nigerian homes. the main food on sundays in nigerian homes is rice and stew.people however started adding flavour to the rice and started making fried rice, jollof rice, or even rice with sauce on sundays but somehow, in almost every nigerian home today,rice is on the menu. so today, i made what i call "FILLING EGG SAUCE" i call it filling because it contains a lot of goodies that nourishes the body. it's not the usual egg sauce with just tomato and egg. enjoy the recipie. INGREDIENTS Eggs-5 Chicken Sausage Onions-1{big} Tomato- 8balls Sardine- 1 {i used titus} Scotch bonnet pepper-5 ,seasoning- 1 cube any stock of your choice,vegetable oil - 1tbsp, Salt to taste. DIRECTION wash and chop the tomato, pepper, and onions, set aside, slice the chicken sausage, break the eggs, open the sardine
in a medium pot, heat up the vegetable oil
add the onions, strir fry for 1 minute
add the tomato, pepper and the chicken sausage
add curry, thyme and the stock
allow to cook for 7 minutes


add the sardine and cover the pot reduce the heat and allow to boil for another 10 mins add the eggs add salt to taste stir for 3mins serve with yam, plantain or rice.
enjoy with a cold fruit juice!

we live in the Era of living and staying healthy. everybody wants to be in shape, someone like me who keeps battling with loosing and gaining weight "wheeeew" it's exhausting to find the food out that the food you love most makes you fat, Bread, Rice, Yam even th air i breathe literally makes me gain weight. so i decided to try out my recipies to reduce my calorie intake. i switched from sugar to honey, flour to oatmeal, more of fruits and vgetables. since i can't eat the normal bread, i decided to make mine healthy and even sweeter using fat free ingredients. on the menu today is my healthy bread and i'll be sharing this easy and amazing recipie for my fellow health freaks. INGREDIENTS: 3 eggs 3 banana 1 cup oat flour 1tsp vanilla 2 tbsp honey a pinch of salt DIRECTION: Pre heat the oven Mash the banana add the eggs and beat properly. if you have electric whisker then it makes this process very easy. add the honey, vanilla and the oat flour and mix until u get a nice consistency. gently add the dough into a greased pan and bake. you know when it's done if you insert a toothpick and it comes out clean. you can enjoy this with any drink of your choice.

No matter how great we are in the kitchen, we often make the mistake of adding more salt than required to the the food unknowingly. when cooking, the best way to add salt is to add little by little. Back in the Days, My Mother taught me to pour salt into the cooking fire while we cook to avoiud having so much salt in the food. well i always do this and it simply ruins the cooker lol. i have no idea if it works or not. Sometimes, it feels like u can't taste the salt while cooking; please STOP adding more salt and allow the food to boil properly before tasting for salt again, then you will realise that the food is already tasty. In the case where you have unknowingly put more salt than required, please don't be scared, try the following ways of reducing salt from your food. These Foods includes any type of Soup Stew Rice. Sauce when any of the above food is salty: TIP1: add more water little by little and allow to boil properly. TIP2: add two slices of yam or potatoe to the food. yam is high in carb and starch and it absorbs water and releases starch thereby making it possible for the salty water from the food to be sucked into it. strange right? yeah but it works. TIP3: do not over spice your food. This does not mean that you should make the mistake of over saliting your food ooo lol. if you do not want to risk over salting your food, salt application should be done "step by step". washing vegetables with salt also increases the risk of over salting your food because the vegetable absorbs thesalted water, if in any case you wash the vegetable with salt, please be mindful of how you spice your food because this can be disastrous especially if there are people waiting to eat the food. HAVE A HAPPY COOKING!!!
